Plant habit is decided before anything else on a tomato crop, because it sets the labour profile for the entire season.
Determinate
The plant sets a fixed number of trusses and stops. Fruit ripens across a compressed window, which suits mechanical or single-pass harvest and open-field production where a short, concentrated picking period is an advantage.
Indeterminate
The plant keeps growing and setting fruit as long as conditions allow. Under protection that turns into a long picking window and a much higher total yield, at the cost of trellising, pruning and continuous labour.
Neither is better. The question is which one your structure, season and workforce are built for.
